3. The Courier: Maximizes earnings per hour while navigating traffic, parking, high-rise elevators, and weather disruptions.

The Failure of Naive Immediate Dispatch:

If a customer orders an artisan pizza requiring 25 minutes to bake, a naive dispatch engine that immediately assigns the closest available courier (5 minutes away) creates severe economic failure:

• The courier arrives in 5 minutes and waits idle outside the restaurant for 20 minutes.
• The courier loses potential delivery earnings; the platform loses courier capacity; and food delivery costs surge.

To achieve profitability, food delivery architectures must master Just-in-Time (JIT) Courier Dispatching.
